Job Description
Key Responsibilities
1. Chicken Cutting and Preparation
-
Perform the complete cleaning and cutting process for fresh chicken, including defeathering (if applicable), removing internal organs, skinning, and washing.

Cut chicken into specific portions (full, half, curry cut, boneless, leg piece, breast piece, wings, liver, etc.) based on customer orders or kitchen requirements.

Use knives, cleavers, cutting boards, and machines (if available) safely and efficiently.
2. Hygiene and Sanitation
-
Maintain the highest level of cleanliness in the workspace, tools, and equipment.

Sanitize knives, surfaces, and containers before and after each task to prevent cross-contamination.

Wear proper protective gear including gloves, apron, and head cover/hairnet.

Dispose of waste parts (feathers, bones, unusable organs, etc.) in designated bins following local regulations.
3. Inventory and Stock Handling
-
Check chicken stock for freshness, texture, smell, and expiry before starting work.

Help in receiving fresh stock, weighing, labeling, and proper cold storage of poultry.

Alert the supervisor about low stock levels, spoiled meat, or quality issues.
4. Customer Service
-
Attend to walk-in customers courteously and understand their specific cutting or portioning requests.

Offer recommendations on chicken types and cuts if asked by customers.

Pack cleaned and cut chicken portions in food-grade packaging and label with quantity and price.
5. Team Collaboration
-
Work alongside other butchers, helpers, kitchen staff, or cleaning teams to ensure smooth workflow.

Coordinate with supervisors for daily cutting plans, special orders, or bulk requirements.

Follow instructions and contribute to the overall cleanliness and efficiency of the meat section.
