Job Description

  • Ensure the dining area is clean, safe, and organized at all times
  • Set up tables and maintain them throughout service
  • Assist in food and beverage service to guests
  • Respond to guest inquiries and special requests promptly and courteously
  • Collaborate with the kitchen staff to ensure efficient and timely service

Key Responsibilities:

  1. Oversee Stewarding Operations:

    • Supervise and manage the stewarding team to ensure cleanliness and sanitation standards are consistently met.

    • Oversee the proper cleaning and sanitization of all kitchen and dining equipment, including pots, pans, dishes, glassware, and utensils.

    • Ensure that dishwashing and cleaning equipment are used correctly, maintained, and in good working order.

    • Monitor the cleanliness of kitchen floors, walls, ventilation systems, and storage areas, ensuring all comply with health and safety regulations.

  2. Staff Management and Training:

    • Lead, train, and motivate the stewarding team to ensure productivity and high standards of hygiene.

    • Create work schedules for the stewarding team, ensuring sufficient coverage for all shifts, especially during busy hours.

    • Conduct regular performance reviews, providing feedback and identifying areas for improvement.

    • Provide training in safe handling and cleaning practices, as well as on proper sanitation techniques and equipment maintenance.

    • Ensure compliance with the company’s policies and procedures in terms of health, safety, and hygiene.

  3. Inventory Management:

    • Oversee the inventory of kitchen and dining room equipment, ensuring that there is enough stock of clean dishes, glasses, utensils, and other necessary items.

    • Maintain stock levels of cleaning materials, ensuring that the kitchen and dining areas are stocked with the appropriate chemicals, sanitizers, and tools.

    • Conduct regular stock checks to minimize loss and ensure that necessary items are ordered in a timely manner.

    • Coordinate with the purchasing department to ensure the procurement of cleaning supplies and equipment.

  4. Hygiene and Sanitation Standards:

    • Enforce strict adherence to cleanliness and sanitation protocols in line with local health and safety regulations (such as food safety laws, fire codes, and environmental standards).

    • Ensure that all areas, including the dishwashing area, kitchen, storage, and dining areas, meet high standards of cleanliness.

    • Conduct regular inspections of all kitchen equipment and ensure that it is cleaned and sanitized properly.

    • Oversee waste management practices to ensure the disposal of kitchen waste is done in a safe and hygienic manner.

  5. Support Kitchen Operations:

    • Ensure that clean and sanitized equipment, utensils, and tools are always available to support the kitchen staff.

    • Work closely with the kitchen and culinary team to ensure smooth service, particularly during high-volume meal times.

    • Assist the kitchen staff by ensuring all kitchen tools and supplies are ready and available for use.

    • Handle any special cleaning tasks requested by the culinary team, including the cleaning of large kitchen equipment or deep cleaning.

  6. Cost Control and Budgeting:

    • Assist in maintaining control over the budget for cleaning supplies and kitchen equipment maintenance.

    • Help reduce costs by ensuring efficient use of resources, proper care of equipment, and minimizing breakage or wastage.

    • Monitor the use of cleaning materials and equipment to prevent unnecessary usage or waste.

    • Identify and implement cost-saving strategies in the stewarding department without compromising hygiene standards.

  7. Guest Service and Satisfaction:

    • Ensure that the kitchen and dining area operations are seamless and efficient, contributing to a high level of guest satisfaction.

    • Respond to any issues or concerns related to cleanliness or hygiene promptly to maintain the hotel or restaurant’s reputation.

    • Assist in managing any guest requests related to the kitchen or dining operations.

  8. Collaboration with Other Departments:

    • Work closely with the Food & Beverage Manager, Executive Chef, and other staff to ensure the proper functioning of the kitchen and dining areas.

    • Coordinate with the front-of-house team to ensure that all required items are delivered to service areas in a timely manner.

    • Support the operations of banquets, events, or catering services by ensuring the necessary equipment is available and clean.
