Job Description

Job Overview:

We are looking for an experienced and passionate Maharashtrian Cuisine Cook who is well-versed in preparing a wide range of authentic Maharashtrian vegetarian and non-vegetarian dishes, including traditional thalis, mutton and chicken specialties, and everyday regional delicacies.

The ideal candidate should possess strong culinary skills, a deep understanding of Maharashtrian spices and cooking methods, and the ability to manage kitchen responsibilities efficiently.

Key Responsibilities:

1. Food Preparation – Maharashtrian Specialties

  • Prepare a full range of Maharashtrian vegetarian and non-vegetarian dishes, including:

    • Veg Dishes: Pithla, Bhakri, Zunka, Bharli Vangi, Batata Bhaji, Poha, Misal, Kanda Bhaji, etc.

    • Non-Veg Dishes: Chicken Rassa, Mutton Sukka, Mutton Kala Masala, Kombdi Vade, Gavran Chicken, etc.

    • Thalis & Festive Platters: Assemble complete Maharashtrian thalis with proper presentation and portioning

    • Prepare accompaniments like chutneys, thecha, solkadhi, varan-bhaat, and seasonal sabzis

2. Kitchen Operations & Cleanliness

  • Ensure clean, hygienic, and organized kitchen conditions at all times

  • Manage daily mise en place, cutting, marination, spice grinding, and cooking schedules

  • Coordinate with kitchen staff and helpers for smooth service during peak hours

  • Maintain utensils, equipment, and cooking areas as per food safety standards

3. Ingredient & Inventory Management

  • Monitor the freshness and quality of vegetables, meats, and spices

  • Assist in ordering, receiving, and storing kitchen supplies

  • Reduce food waste by proper planning and portion control

4. Menu Development & Customization

  • Suggest and develop new seasonal Maharashtrian dishes as per trends and customer preferences

  • Modify spice levels and ingredients to suit customer needs (on request)

  • Innovate within the traditional framework to create fusion or premium offerings

5. Compliance & Safety

  • Adhere to FSSAI standards, hygiene norms, and kitchen safety protocols

  • Ensure proper cooking temperatures, food storage, and sanitization procedures

  • Handle raw meat and poultry safely and hygienically


Required Qualifications:

  • Education: No formal education required, but diploma/certificate in cooking/hotel management is a plus

  • Experience: Minimum years of experience in a professional kitchen focused on Maharashtrian cuisine preferred

  • Experience in restaurants, hotels, cloud kitchens, or catering units preferred

Key Skills:

  • Expert knowledge of authentic Maharashtrian flavors, spices, and traditional cooking styles

  • Skilled in veg and non-veg preparations, including mutton and chicken gravies

  • Good knowledge of kitchen workflow, hygiene, and inventory control

  • Ability to work independently and manage time under pressure

  • Team player with basic communication skills (Marathi/Hindi preferred)
