Job Description
We are seeking an experienced North and South Indian Cook to join our team in Bangalore. The ideal candidate should have expertise in preparing authentic North Indian cuisine, &South Indian including dishes like tandoori chicken, naan bread, and rich curries.
- Prepare and cook North Indian dishes to perfection
- 2+ years of experience as a North Indian Cook
Key Responsibilities
1. Preparation of North Indian Dishes
-
Prepare a wide variety of North Indian gravies, dry vegetables, dals, rotis, naans, parathas, tandoori dishes, and kebabs.

Operate and maintain tandoor ovens for baking breads and grilling meats and vegetables.

Ensure the use of authentic ingredients and spice blends to maintain traditional flavors.

Handle marination and slow-cooking techniques for curries and kebabs.
2. Preparation of South Indian Dishes
-
Expertly prepare breakfast items like idli, dosa, vada, pongal, and upma.

Cook staple curries and rice items such as sambar, rasam, avial, poriyal, and curd rice.

Make South Indian style vegetarian and non-vegetarian biryanis, thalis, and gravies.

Use traditional methods of tempering (tadka), steaming, and roasting specific to the cuisine.
3. Food Quality and Consistency
-
Ensure all dishes meet the restaurant's taste and presentation standards.

Maintain recipe consistency across batches and outlets.

Adapt dishes slightly to meet customer preferences (mild, spicy, less oil, etc.), if required.
4. Hygiene and Kitchen Safety

Follow strict FSSAI and kitchen hygiene guidelines.

Maintain a clean and sanitized cooking station at all times.

Use safe and clean cooking practices, especially when working with meats and dairy.
5. Inventory & Preparation Planning
-
Check the availability and freshness of ingredients before beginning prep work.

Inform the kitchen supervisor of stock shortages or special ingredient needs.

Minimize waste and manage portion sizes to ensure profitability.
6. Team Coordination & Timely Service

Work with the kitchen team to ensure timely delivery of orders, especially during peak hours.

Communicate effectively with serving staff to ensure smooth kitchen operations.

Support junior cooks and helpers by guiding them in mise en place and basic preparations.
7. Festival and Special Menu Preparation

Assist in the planning and execution of festive, seasonal, or special event menus like Diwali, Onam, Eid, or weddings.

Prepare regional specialties from North and South India as per event requirements.
