Job Description

-          Site round for maintaining area hygiene and product safety

-          Checking personal hygiene, over all hygiene of the kitchen

-          Monitoring and recording cooking temperatures, cleaning and sanitation practices.

-          Maintaining storage practices of raw materials stores, tagging of raw material and finished product 

-          Sampling of the prepared menu. Testing to ensure the quality. Handling customer complaints

-          Maintaining testing requirement as per FSSAI.  Maintaining food safety requirements as per FSSAI.

-          Documentation maintenance as per food safety and operation requirements

-          Training of the staff on basic food hygiene requirement.

-          Maintaining over all food safety and quality of the product and effective implementation of the food system. 

Key Responsibilities

1. Raw Material Quality Inspection

  • Inspect incoming raw materials (e.g., grains, vegetables, meat, dairy, spices) for physical, chemical, and microbial quality parameters.

  • Approve or reject materials based on predefined specifications and standard operating procedures (SOPs).

  • Coordinate with the procurement and vendor teams to ensure quality consistency from suppliers.

2. In-Process Quality Control

  • Monitor critical control points (CCPs) and conduct regular checks during different stages of food processing.

  • Record production parameters such as temperature, pH, moisture content, and weight variation to ensure compliance.

  • Identify and report any deviations or non-conformities in the manufacturing line to prevent defects.

  • Work closely with production staff to ensure adherence to Good Manufacturing Practices (GMPs).

3. Finished Product Testing

  • Conduct physical, chemical, organoleptic (taste, smell, appearance), and microbial testing on final products before dispatch.

  • Ensure that finished goods comply with internal product standards and regulatory requirements like FSSAI guidelines.

  • Label and maintain proper records for batch testing, shelf-life studies, and product approval before release.

4. Documentation & Reporting

  • Maintain all QC-related records, including daily inspection logs, test reports, product traceability, and quality reports.

  • Prepare documentation for internal audits, external audits, and regulatory inspections (FSSAI, ISO, BRC, etc.).

  • Ensure that data from lab instruments and testing procedures are properly recorded and archived.

5. Hygiene & Sanitation Monitoring

  • Inspect cleanliness of production and storage areas to ensure sanitation, pest control, and hygiene protocols are followed.

  • Ensure all personnel adhere to personal hygiene standards, gowning protocols, and sanitization procedures.

  • Support housekeeping and sanitation audits regularly.

6. Product Complaints & Non-Conformance Management

  • Assist in investigating customer complaints or internal product failures by conducting root cause analysis.

  • Participate in corrective and preventive action (CAPA) plans to avoid recurrence of quality issues.

  • Maintain logs of non-conformance and suggest process or ingredient modifications to improve quality.

7. Training & Internal Compliance

  • Assist in conducting training programs for production staff on food safety, hygiene, and quality systems.

  • Ensure team members are aware of standard QC procedures, documentation methods, and compliance policies.

  • Promote awareness about critical quality standards, including allergens, labeling accuracy, and food safety practices.
