Having more than 5 years experience and looking for immediate joiner
Knowing and prepare all south Indian sweets to our all the outlet restaurants.

Position Overview

We are seeking an experienced and passionate South Indian Sweet Master to join our culinary team and oversee the production and consistency of authentic South Indian sweets across all our restaurant outlets. The ideal candidate must have extensive hands-on experience in preparing traditional and contemporary South Indian desserts using both manual and semi-automated methods.

You will be responsible for crafting a wide variety of sweets such as Mysore Pak, Boondi Ladoo, Rava Kesari, Jangiri, Kaju Katli (South Style), Badusha, Coconut Burfi, Athirasam, Payasam varieties (Pal, Semiya, Moong Dal, Chakka), Paniyaram, and more. You will also ensure that recipes are standardized, hygienically prepared, and consistently delivered to multiple outlets.

This role is critical to maintaining the authenticity and taste of our brand’s traditional dessert offerings.

Key Responsibilities

1. Sweet Preparation & Expertise

  • Prepare and cook a variety of traditional South Indian sweets following authentic techniques and recipes.

  • Ensure consistency in texture, taste, appearance, and aroma of sweets across all batches and outlets.

  • Adapt recipes based on feedback while maintaining original taste and cultural authenticity.

2. Production Management

  • Lead daily sweet production as per the outlet requirement sheet or central kitchen plan.

  • Work with the head chef or production coordinator to forecast demand and manage large-scale preparation during festivals or special occasions (e.g., Diwali, Onam, Ugadi, Pongal).

  • Supervise helpers or junior kitchen staff to ensure proper division of work and training.

3. Quality Control & Hygiene

  • Ensure all sweets are prepared in accordance with FSSAI food safety, hygiene, and cleanliness standards.

  • Monitor raw material quality, shelf-life, and storage practices for ghee, sugar, jaggery, nuts, milk, and other ingredients.

  • Maintain a clean and organized sweet production station with regular sanitation schedules.

4. Recipe Development & Standardization

  • Develop or refine recipes that can be scaled across multiple outlets while preserving traditional taste.

  • Prepare SOPs for sweet-making processes, including measurements, timing, cooking methods, and storage procedures.

  • Innovate or modernize classic sweets to suit current market trends without compromising authenticity.

5. Inventory & Ingredient Management

  • Coordinate with the purchase department or storekeeper to manage sweet ingredients inventory.

  • Track daily usage of high-value ingredients like ghee, khoa, cashew, dry fruits, etc., to reduce wastage.

  • Recommend alternative ingredients during shortages without altering quality.

6. Team Collaboration & Training

  • Train junior chefs and kitchen helpers in basic sweet-making techniques and hygiene standards.

  • Participate in daily kitchen meetings and share production updates or concerns.

  • Maintain a positive, respectful work culture in the kitchen environment.
