Job Description

Job Summary

We are seeking an experienced and passionate Tandoori Chef de Partie (CDP) to join our dynamic kitchen team. The ideal candidate will have in-depth knowledge of Indian cuisine, particularly in the art of tandoor cooking. You will be responsible for preparing, cooking, and presenting a range of authentic tandoori dishes to the highest standard. This position requires strong technical skills, attention to detail, and a commitment to food quality and hygiene standards.

As a Tandoori CDP, you will play a key role in delivering an exceptional dining experience for our guests by preparing flavorful dishes that reflect traditional and contemporary Indian culinary styles. You will also contribute to menu development and work collaboratively with other chefs to maintain high kitchen performance.

Key Responsibilities

Food Preparation and Cooking

  • Prepare and cook a wide variety of tandoori dishes such as tandoori chicken, seekh kebabs, fish tikka, paneer tikka, naan, roti, and other breads using a traditional clay tandoor oven.

  • Monitor the temperature and consistency of the tandoor oven to ensure optimal cooking conditions.

  • Marinate meats, seafood, and vegetables with traditional Indian spices and yogurt-based marinades, ensuring proper penetration and flavor.

  • Ensure all dishes are prepared according to standardized recipes and presentation guidelines.

  • Maintain consistency in taste, appearance, and portion control of all dishes served.

Quality Assurance

  • Ensure all food leaving the kitchen is of high quality, properly cooked, and visually appealing.

  • Conduct regular taste checks and make necessary adjustments to seasoning and preparation techniques.

  • Inspect ingredients for freshness, quality, and proper storage conditions.

  • Minimize food wastage through efficient preparation and portioning.

Kitchen Operations

  • Support the Sous Chef and Head Chef in the daily operations of the kitchen.

  • Assist with menu planning and the development of new tandoori dishes and specials.

  • Ensure all mise en place is prepared and ready before service periods.

  • Maintain a clean, organized, and safe workstation at all times.

  • Follow kitchen safety protocols and hygiene practices, including the use of gloves, hairnets, and appropriate footwear.

Team Collaboration

  • Work closely with other chefs, cooks, and kitchen staff to ensure smooth and efficient service during peak hours.

  • Train junior kitchen staff and commis chefs in tandoor cooking techniques and best practices.

  • Communicate effectively with the service team to coordinate the timely delivery of food.

Inventory and Cost Control

  • Monitor stock levels of tandoori ingredients and cooking supplies, and report shortages to the Sous Chef or Kitchen Manager.

  • Assist with inventory control, including stock rotation (FIFO), labeling, and minimizing spoilage.

  • Ensure cost-effective use of ingredients without compromising on quality or portion size.

Requirements

Qualifications & Experience

  • Minimum experience as a Tandoori Chef or in a similar role within a high-volume or fine-dining Indian kitchen.

  • Proven expertise in tandoor cooking, including clay oven handling, marination techniques, and Indian spice knowledge.

  • Culinary diploma or equivalent certification preferred but not mandatory if experience is strong.

  • Strong understanding of Indian cuisine with a focus on regional tandoori specialties.

Skills

  • Excellent knife skills and culinary techniques.

  • Strong knowledge of food safety and kitchen hygiene standards (HACCP or equivalent certification is a plus).

  • Ability to work in a fast-paced and high-pressure environment.

  • Good communication and interpersonal skills.

  • Ability to work independently as well as part of a team.

  • Creativity and passion for Indian culinary traditions.
