( Indian |Chinese | Tandoor Specialist – Preference: Nepal / Bengal Region)
We are hiring an experienced and multi-skilled cook for our restaurant who is proficient in:
Indian Food:
Curries, vegetables, roti, rice, dal, poori, paratha etc.
Chinese Food:
Noodles, Manchurian, Chowmein, Fried rice etc.
Tandoori Items:
Tandoori roti, naan, paneer/chicken tikka, kebabs etc.
Job Summary:
We are looking for an experienced and versatile cook for our restaurant who can prepare a wide range of dishes across Indian, Chinese, and Tandoori cuisines. The ideal candidate should be well-versed in both vegetarian and non-vegetarian cooking, maintain consistency in taste and presentation, and ensure high standards of hygiene and efficiency in the kitchen.
The cook should be capable of handling multiple food stations, managing prep work, cooking during peak hours, and supporting junior staff when required. This role requires deep knowledge of traditional Indian flavors, street-style Indo-Chinese dishes, and expert-level handling of the tandoor (clay oven).
Key Responsibilities:
1. Indian Cuisine:

Prepare daily Indian meals including a variety of curries (veg and non-veg), dals, sabzis, and gravies.

Cook all types of Indian breads such as roti, poori, paratha, stuffed paratha, missi roti etc.

Prepare perfectly cooked rice, jeera rice, pulao, khichdi, and fried rice (Indian style).
-
Manage spice blends and ensure consistency in flavor, aroma, and presentation.

Handle batch preparation for thali or buffet-style service if needed.
2. Tandoori Specialties:

Operate the tandoor oven for preparing tandoori roti, butter naan, garlic naan, rumali roti etc.

Marinate and cook tandoori starters like paneer tikka, chicken tikka, seekh kebab, malai tikka, and more.

Maintain proper control of cooking temperature and tandoor heating.
-
Ensure meat is cooked thoroughly and stays juicy while maintaining authentic taste.
3. Chinese / Indo-Chinese Cuisine:

Cook popular fast-food and street-style Indo-Chinese dishes like:

Veg / Chicken Noodles

Fried Rice (veg/egg/chicken)

Manchurian (dry and gravy)

Chilli Paneer, Chilli Chicken, Gobi 65, Schezwan fried rice/noodles

Maintain speed and quality during rush hours.
4. Kitchen Operations & Hygiene:

Oversee mise en place (pre-preparation) including chopping, marinating, and portioning.
